
Pumpkin Ravioli with Sage Butter

Ingredients
- 1 lb piece of pumpkin
- 1 tablespoon of olive oil
- Large pinch of fennel seeds (lightly crushed)
- 1 medium size egg (yolk only)
- 1 oz/25g of parmesan cheese (grated)
- Freshly grated nutmeg (just a pinch)
- 2 amaretti biscuits (crushed)
- 1 oz/15g of fresh white breadcrumbs.
- Salt.
- Freshly ground black pepper.
Egg Pasta
- 8 oz/225g Of plain flour.
- Quarter of a teaspoon of salt.
- Half a teaspoon of olive oil.
- 2 medium size eggs
- 4 medium size eggs (yolks only)
Sage Butter
- 3 oz/75g Of unsalted butter.
- 20 small sage leaves.
- 1 tablespoon of lemon juice
